Just look at this yummy, HEALTHY homemade batch of granola!
The recipe is courtesy of Jen deCurtins from Peanut Butter Runner. Check out her blog post with ingredients and instructions right here. I whipped up a batch of this tasty granola in no time except instead of chia seeds (which I didn’t have in my pantry), I threw in a big handful of flaxseed.
By the way, Jen’s blog is well-written and full of inspiration. Not only does she enjoy running, but she’s an accomplished yoga instructor and author of a new book featuring 101 plank exercises, too. (If you’ve ever held plank or one of its variations in class, then you know this book is going to be the real deal in core strengthening. Yikes!)
I’ve been enjoying the granola all week long paired with my other new love: Siggi’s Icelandic Style Yogurt. It’s thick and creamy with all-natural ingredients plus a lot less sugar than regular yogurt. Because the yogurt (or “skyr” as it’s known in Iceland) isn’t as sweet, the subtle peanut butter flavor of the granola doesn’t get lost.
